Banana Pudding Ingredients:
3/4 cup sugar, divided |
1/3 cup flour |
3 eggs, seperated yolk and white |
2 cups milk |
1/2 tsp vanilla |
36 nilla wafers (or generic substitute) |
5 bananas, sliced |
Directions:
1. Preheat oven to 350F. Mix 1/2 cup sugar, flour and salt in top of a double boiler. (If you don't have a double boiler you can improvise by filling a large saucepane 2-3 inches of water and placeing a smaller sauce pan or oven safe bowl in the water, the idea is to cook with steam instead of direct heat) Blend in 3 egg yolks and milk. Cook, uncovered, over boiling water 10-12 minutes or until thickend, stirring constantly. Remove from heat; stir in vanilla. 2. Spread small amount of custard on bottom of 1-1/2 quart baking dish; cover with layers of 1/3 each of the remaining sliced bannans and wafers. Continue to layer wafers, bananas and custard to make a total of 3 layers of each ending with wafers. 3. Beat egg whites on high speed of electric mixer unit soft peaks form gradually add remaining 1/4 cup sugar beating untill stiff peaks form. Spoon over custard spread even to cover entire surface or custard and sealing well to edge 4. Bake 15-20 minute or until lightly browned. Cool slightly. |
