From Clean Eating Magazine. Ingredients:
12 egg whites |
2/3 cup uncooked oatmeal |
2/3 cup fiber one cereal |
2 bananas |
6 tablespoons jam (no or low sugar) |
1/2 teaspoon vanilla extract |
1/2 teaspoon cinnamon |
1 teaspoon baking soda |
1 teaspoon baking powder |
6 g stevia plus (6 packets) |
1 ounce chopped pecans |
Directions:
1. Preheat oven to 350 degrees. 2. Mix everything except the cereal and nuts in a blender. (Note: recipe does not state exact amount of cinnamon or vanilla - 1/2 teaspoon is a guesstimate). 3. Fold in the cereal and mix well. 4. Line a muffin tin with aluminum cupcake liners and spray with non-stick cooking spray. 5. Pour the muffin batter evenly into each tin and top with the nuts. 6. Bake for 30 minutes. |
