These are so incredibly good. Another delight from my friend Joann's Bed and Breakfast. She is always willing to share her recipes and this is one of her most highly requested. Enjoy Ingredients:
1/3 cup chopped pecans |
3 tablespoons light brown sugar |
1 tablespoon sour cream |
1 egg lightly beaten |
3 small ripe bananas mashed |
1/2 cup granulated sugar |
1/4 cup vegetable oil |
1- /2 cups pancake mix |
Directions:
1. Combine pecans and brown sugar then mix in sour cream and set aside. 2. Combine egg, bananas, sugar and oil then mix well. 3. Stir in pancake mix until just moistened. 4. Fill greased muffin tins 2/3 full. 5. Drop 1 teaspoon pecan mixture in center of each muffin. 6. Bake 20 minutes at 400 degrees. |
