Here's another cool treat for hot days. Ingredients:
20 ounce can crushed pineapple, save the juice |
2 3-ounce (or 1 6-ounce) pkg lemon jello |
4 cups hot water |
16 large marshmallows |
4 bananas |
1 cup pineapple juice |
1/2 cup sugar |
2 tbsp flour |
2 tbsp butter |
2 beaten eggs |
1 cup thawed frozen whipped topping |
crushed nuts for garnish |
Directions:
1. Drain pineapple but keep the juice to use, 2. Dissolve the gelatin in hot water, then add the marshmallows and stir until they melt. 3. Let cool, then slice the bananas and add them and the drained pineapple. 4. Pour into a 9x13 glass dish and put in the refrigerator until gelatin is firm. 5. When gelatin is firm, make your topping. Put the reserved pineapple juice in a saucepan along with the sugar, flour, butter and eggs. 6. Cook and stir constantly until the mixture is thick. 7. Fold in the whipped topping. 8. Spead over top of gelatin. 9. Sprinkle with crushed nuts of your choice. 10. Refrigerate until serving time. |
