It is from the Totally Muffins Cookbook. They are moist and delicious. I hope you enjoy them. Ingredients:
3/4 cup chopped pecans or 3/4 cup walnuts or 3/4 cup chocolate chips |
2 cups all-purpose flour |
1 tablespoon baking powder |
1/2 teaspoon salt |
1/2 cup butter, softened |
3/4 cup brown sugar |
2 eggs |
1 1/2 teaspoons vanilla |
1 1/2 cups mashed bananas (approx 3) |
Directions:
1. Preheat oven to 375 degrees F. 2. Grease or line muffin tins with paper cups. Spread nuts on a tray and toast in oven 8-10 minutes Set aside. 3. In a bowl combine flour, baking pwdr & salt. 4. In another bowl cream butter, sugar and vanilla until smooth and creamy. 5. Beat in eggs one at a time. 6. Add mashed bananas and beat until combined. 7. Stir dry ingredients into banana mixture just until flour disappears. 8. Lightly stir in nuts, choc chips or a mix of both. 9. Spoon batter into muffins cups to the top. 10. Bake 20 minutes or until toothpick comes out clean. 11. These double and freeze well. 12. Note: I like to use a mix of pecans & chocolate chips. |
