This is my decadent breakfast! it looks and tastes fabulous - I'll need to take a photo next time! Makes 2 crepes CEA HOW SERVING SIZE: 1 protein, 1 fruit, 1 fat + 1 optional oat bran Ingredients:
1 large egg |
1/4 cup milk |
2 oz banana – mashed |
3 tsp oat bran |
6 oz mixed seasonal fresh fruit – cut up into small pieces ie: apple, blueberries, strawberries, mango, passionfruit, apricot, peach etc |
1/2 tsp butter |
1/2 tsp sliced almonds |
3/4 cup unsweetened, plain yoghurt or quark |
cinnamon |
fresh mint |
Directions:
1. In a large bowl, beat egg until pale yellow and fluffy (about 2 minutes). 2. Mix in milk, mashed banana and oat bran. 3. Melt half the butter in a 9 or 10 inch skillet and heat over medium-low heat. 4. Add half of the mixture to the hot pan. Use the back of a spoon to spread the mixture evenly over the bottom. 5. Cook until bottom is lightly browned, about 2 minutes, then carefully lift crepe and turn over. Cook until second side is lightly browned, about 2 minutes more. 6. Remove from pan and serve with the fruit salad mix, yoghurt and herbs to taste |
