This recipe came from a church cookbook my mom had saved and passed to me when I got married. I've adapted it quite a bit, but with good results! DH didn't even need syrup for them! :) Ingredients:
1 banana |
2 eggs |
1/2 cup sugar |
1 1/2 cups milk |
2 cups flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1 pinch salt |
1/2 teaspoon cream of tartar |
1 dash cinnamon (to taste) |
1 small handful chocolate chips (milk or semi-sweet) (optional) |
Directions:
1. Mash banana, then beat in rest of ingredients. Make small pancakes, cook on medium heat, flipping pancakes when the first side begins to bubble. 2. For plain pancakes, eliminate banana, cinnamon & chocolate and cook as above. |
