It is called a muffincake but it also is a bread and a coffeecake. Its confused, but it sure does taste good. Ingredients:
1 1/2 cups flour |
1 cup quick oats, uncooked |
1/3 cup firmly packed light brown sugar |
1 tbsp. baking powder |
1/2 tsp. baking soda |
1/4 tsp. salt |
1/2 tsp. cinnamon |
2/3 cup mashed ripe banana (about 2 small) |
1/2 cup orange juice |
1/3 cup butter melted |
1 egg, lightly beaten |
1/2 tsp. grated orange zest |

1/2 cup powdered sugar |
1 tbsp. orange juice |
1/2 tsp. grated orange zest |
Directions:
1. Heat oven to 400*. Coat bottom and inside ring of a 9 springform pan with cooking spray. 2. In a large bowl, combine dry ingredients. Add banana, juice, butter, egg and zest, mixing just until moistened. Pour into prepared pan. 3. Bake 30-35 minutes or until golden brown. Cool 10 minutes on wire rack; remove from pan. 4. In a small bowl, combine remaining ingredients; drizzle evenly over cake while still warm. |
