Thick, old-style oats add a rustic touch to these buttery, spelt flour scones. Throwing in some dark chocolate chips and a drizzle of honey up the breakfast ante even more! Ingredients:
1 1/4 cups spelt flour |
3/4 cup flour |
1/2 cup old-fashioned oats (not quick or instant) |
1 tsp ground cinnamon |
1 tbsp baking powder |
1/2 tsp salt |
3 oz cold butter, cubed |
2 over-ripe bananas |
2 tbsp whole milk |
1 tsp vanilla |
1 tbsp brown sugar |
1 tbsp honey |
1/3 cup miniature, semisweet chocolate chips |
Directions:
1. Preheat the oven to 425 degrees. Grease a large baking sheet. 2. Stir the dry ingredients together in a large bowl. 3. Cut in the butter until the mixture looks mealy. 4. Mash the bananas with milk, vanilla, sugar and honey. 5. Add the banana mixture to the dry ingredients and stir until partially combined. 6. Turn out onto a lightly floured counter and knead until the dough just holds together. 7. Pat into a 3/4 thick circle. 8. Cut into 12 wedges. 9. Bake for 14 minutes, then remove to a wire rack and cool slightly (if you don't devour them first!). |
