Vegan banana pancakes, delicious by themselves or with a sweet topping. Soy flour gives these more protein than regular pancakes. Ingredients:
1/2 cup rolled oats |
1/2 cup unbleached flour |
1/4 cup soy flour |
1 tablespoon baking powder |
1 tablespoon sugar (optional, to taste) |
1 1/2 cups soy milk, plain |
2 bananas |
Directions:
1. In a large bowl combine all dry ingredients. Blend in the soymilk. Thinly slice the bananas and fold them in. 2. Pour 1/4 cup batter into hot nonstick griddle or pan. Spread batter with spatula to an even thickness. A teaspoon or two of oil can be added beforehand to help prevent sticking and create crispiness around the edges. 3. Cook for 2 minutes, until bubbles appear. Flip and cook for another minute. Careful while flipping, these pancakes are more fragile than your average mix from a box. 4. Serve plain or with your choice of topping. Suggestions: fruit spread, applesauce, margarine, brown sugar, sliced bananas, soy whipped cream and/or pecans. 5. Makes about 12 pancakes. |
