I tried playing around with a few recipes, and this is the one that worked out the best for my family. It's a light cookie; I found that making it into bars worked better for me, since I only had one hand and could not spoon them onto a cookie sheet. I also used a food processor to mix the batter to make it quicker and easier to do while holding my daughter. :)
Ingredients:
2 tablespoons butter (melted)
3/4 cup shortening
1 egg
3 bananas
1 1/4 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 3/4 cups oats
1/2 cup walnuts (optional)
Directions:
1. Preheat oven to 375°F.
2. Grease an 8x9 (for thicker bars), or a 13x9x2 (for thinner bars) pan.
3. Slice up bananas (makes it easier to mix).
4. Mix butter, shortening, egg, and bananas until creamy.
5. In a separate bowl mix flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
6. Slowly add the dry mix to the creamy mix until blended.
7. Mix in the oats.
8. Pour mix into pan.
9. Bake 10 minutes.
