Banana Oat Coconut Prune Bread |

My new favorite quick bread! Made some changes to my basic banana oat bread by adding some extra ingredients. This was the outcome and I love it. Super easy and quick to make. Ingredients:
1 egg |
3/4 cup applesauce |
1/2 cup sugar |
2 -3 mashed ripe bananas |
1 tablespoon cinnamon |
1 teaspoon cardamom |
1 1/2 cups self-rising flour |
1 cup oats |
1/2 cup milk |
6 -8 cut up prunes |
1/2 cup coconut flakes |
Directions:
1. Mix the first 6 ingredients. Add flour, oats, milk, prunes and coconut and stir until mixed well. 2. Pour batter in greased loaf pan, sprinkle with some oats and bake for about 35-45 minutes at 375 degrees. |
