I have been on a baking kick and just threw these together. They were better as mini muffins than regular sized. Ingredients:
4 mashed bananas |
2 cups whole wheat flour |
1/2 cup sugar |
2 tablespoons baking powder |
1/2 teaspoon dried orange peel |
1 teaspoon cinnamon |
1/4 cup golden raisin |
1/4 teaspoon salt |
2 eggs |
1/3 cup canola oil |
1/3 cup honey |
1/3 cup pecans, chopped |
1/3 cup sunflower seeds |
Directions:
1. Spray mini muffin pan or use liners. 2. Preheat oven to 350. 3. Mix dry ingredients together. 4. Mix wet ingredients into dry. 5. Bake about 15-20 minutes until done. 6. These freeze well. |
