I have made this recipe many times over the years and my DH loves it, I hope you will too. This delicious banana bread uses a food processor, it can be done equally by hand if you don't own one. The quantity given makes 1 large loaf. It comes from the British book of food processors properly explained by Dianne Page. Ingredients:
2 ounces walnuts, whole |
2 -3 large bananas, very ripe |
8 ounces self-raising flour |
1/2 teaspoon salt |
4 ounces butter, softened |
6 ounces caster sugar (us superfine sugar) |
4 ounces sultanas (us golden raisins) |
2 eggs, beaten |
Directions:
1. Put the walnuts into a food processor bowl and process until coarsely chopped. 2. Peel the bananas and break each into 4 pieces and process with the walnuts until mashed. 3. Add the remaining ingredients and process untill well mixed. 4. Spoon the mixture into a large greased loaf tin. 5. Smooth the surface and bake for 1-1 1/2hrs at 350 degrees or until a tooth pick comes out clean. 6. Cool in the loaf tin for 15 minutes then turn out onto a cooling rack. |
