Banana-Nut Muffins (No Processed Sugar) |

These muffins are made without processed sugar and are incredibly moist, delicious and nutritious! Ingredients:
1 3/4 cups flour (i prefer white whole wheat) |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/3 olive oil |
1/2 cup date syrup |
2 eggs, beaten |
1 large mashed ripe banana |
1/4 cup hot water |
1/4 cup chopped walnuts or 1/4 cup pecans |
Directions:
1. Mix together dry ingredients in large bowl. In separate bowl, add eggs, oil and date syrup until they are well-blended. Add in mashed banana. Incorporate the wet ingredients and hot water simultaneously into dry ingredients. Gently mix in nuts. 2. Pour into 12-cup muffin tin and bake in 350 oven for approximately 17 minutes. 3. Enjoy! |
