These muffins are dense. High in fiber and protein. They are vegan as well. Great for a gotta run snack. Ingredients:
2 cups oat bran flour |
1/2 cup soy flour |
1/2 cup wheat germ |
3 small bananas |
1 teaspoon vanilla extract |
1/2 teaspoon ground cinnamon |
1 tablespoon active dry yeast |
2 tablespoons chopped walnuts |
1/2 cup soymilk |
3/4 cup honey |
1/2 cup canola oil |
Directions:
1. Preheat oven to 350°F. 2. Mix all ingredients together with electric mixer. 3. Use muffin liners and fill 3/4 full. 4. Let stand for ten minutes until mixture rises a little. 5. Bake for 30-40 minutes. |
