This is from Zoya Foco's Lickety-Split Meals cookbook. I modified to fit the ingredients I had in the pantry. Ingredients:
2 1/3 cups whole wheat pastry flour |
1/3 cup sugar |
1 1/2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
2 bananas |
2 jumbo eggs |
2/3 cup low-fat milk |
2/3 cup applesauce |
1/2 cup walnuts, chopped |
Directions:
1. Preheat oven to 350 degrees. Spray muffin tins with nonstick spray. If using papers, spray the inside of the papers and top of muffin pan with nonstick spray. 2. Using a fork, mix dry ingredients in a large bowl. 3. Mash the bananas and add the eggs, milk and applesauce, mixing well. 4. Add the wet ingredients to the dry ingredients and mix. 5. Fold in the walnuts. 6. Pour batter into prepared muffin tin. Bake for approximately 20 minutes or until golden brown and a toothpick inserted into the center of a muffin comes out clean. |
