This came from Cooking Light. I have not tried this, just posting for safe keeping. Ingredients:
1/2 cup mashed ripe banana |
1/3 cup packed brown sugar |
1/4 cup honey |
1 tablespoon vegetable oil |
1/2 teaspoon vanilla extract |
1 large egg |
1/2 cup all-purpose flour |
1 1/4 cups multigrain hot cereal (quaker recommended) or 1 1/4 cups quick-cooking oats (quaker recommended) |
1/4 cup chopped pecans |
1/2 teaspoon salt |
cooking spray |
Directions:
1. Preheat oven to 350. 2. Beat the first 6 ingredients at medium speed of a mixer until blended. Lightly spoon the flour into a dry measuring cup, and level with a knife. Gradually add the flour, cereal, pecans, and salt to the banana mixture, stirring until well-blended. 3. Spoon mixture into an 8-inch square baking pan coated with cooking spray. Bake at 350 for 25 minutes. Cool completely on a wire rack. |
