This recipe different from the other Banana Nut Cake. See recipe for bake time. Ingredients:
3 cups all-purpose flour |
2 cups sugar |
1 teaspoon each baking powder, baking soda, salt, ground cinnamon and nutmeg |
4 eggs, lightly beaten |
1-1/3 cups vegetable oil |
1-1/2 teaspoons vanilla extract |
1 can (8 ounces) crushed pineapple, undrained |
2 cups mashed ripe bananas (3 to 4 medium) |
1-1/2 cups chopped walnuts |
confectioners' sugar |
Directions:
1. In a mixing bowl, combine dry ingredients. 2. Beat in eggs, oil and vanilla. 3. Fold in pineapple, bananas and nuts. 4. Pour in to a well-greased 10-in. tube pan. 5. Bake at 350 degrees for 60-65 minutes or until cake tests done. 6. Cool in pan 15 minutes before removing to a wire rack. 7. When completely cooled, dust with confectioners' sugar. 8. Yield: 12-16 servings. |
