This is one I modified from a Sure*Jell recipe. Ingredients:
3 cups bananas, ripe mashed |
1 tablespoon lemon juice |
1 3/4 ounces fruit pectin |
1/2 teaspoon butter |
4 cups sugar |
1/2 cup light brown sugar |
2 cups walnuts, chopped and toasted |
1 1/4 teaspoons cinnamon (or ginger, they will be very different) |
1/2 teaspoon nutmeg |
Directions:
1. Use standard canning procedures. 2. Place bananas and lemon juice into a saucepan. Mix well. 3. Stir in pectin. Add butter to reduce foaming. 4. Bring to a full rolling boil on high heat, stirring constantly. 5. Add sugars and stir till well blended. 6. Add walnuts and spices, mix well. 7. Return to rolling boil and boil 1 minute stirring constantly. 8. Remove from heat and skim off any foam. 9. Ladle into prepared jars within 1/8 in of top. 10. Seal with good canning procedures. |
