Ingredients:
1/4 cup shortening |
3/4 cup sugar |
1 egg |
2/3 cup mashed ripe bananas |
2 cups all-purpose flour, divided |
1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup milk |
1 1/2 teaspoons vanilla extract |
3/4 cup chopped pecans |
Directions:
1. Cream shortening; gradually add sugar, beating well. Add egg; beat well. Add bananas, and mix until smooth. 2. Combine 1 3/4 cups flour, baking powder, soda, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla. Dredge pecans in remaining flour; stir into batter. 3. Pour batter into a greased and floured 9- x 5- x 3-inch loaf pan. Bake at 350° for 1 hour. Cool in pan 10 minutes. Remove from pan, and cool completely on wire rack. |
