I love different banana loaves as you all may well know by now. This is another spin Note: fruit may be a ripe peach or plum also Ingredients:
2 large ripe bananas |
1 ripe large ripe necatarine, pitted, skin on |
1/4 cup youghurt |
1/3 cup oil |
2 eggs |
3 cups flour |
1 1/2 cups sugar |
1 tsp vanilla |
1 tsp baking soda |
2 tsp baking powder |
Directions:
1. Place all in high speed blender and pulse smooth, stopping a few times to scrape sides of container. 2. Or beat all together with electric mixer till smooth 3. Place in a large loaf pan 4. Bake 325- 350F about 1 hour or tested done in center 5. Cover top with foil the last 10 to 15 mins if browning to fast 6. Cool 1 0 mins in pan and remove to cool completely. Wrap in foil to mellow overnight before slicing 7. freezes well |
