my mom used to make these all the time.
Ingredients:
1 cup all purpose flour
1/2 cup oats
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 egg
3/4 cup granulated sugar
1/3 cup shortening
1 1/2 cups mashed banana ( 3-4 bananas)
3/4 cup raisins (optional)
Directions:
1. Combine flour, oats, baking powder, baking soda, and salt in a mixing bowl.
2. Beat egg, sugar, shortening, mashed banana, and raisins together thoroughly
3. Add banana mixture to dry ingredients
4. stir until moistened
5. Fill greased muffin cups
6. Bake at 375 F for 20-25 mins
