Makes 24 mini muffins at 28 cals a piece, 12 muffins at 57 cals each. Add 1/8 cup stevia. Ingredients:
1 cup all-purpose flour |
1 tablespoon baking powder |
1/2 teaspoon baking soda |
1/8 teaspoon kosher salt |
1 banana, mashed |
1/4 cup unsweetened applesauce |
1 egg |
1 1/2 teaspoon vanilla extract |
Directions:
1. preheat oven to 350F 2. blend wet ingredients in a bowl 3. mix dry ingredients in a separate bowl 4. add wet mix to dry, and stir until just combined 5. scoop mix into muffin tin 6. sprinkle with cinnamon if desired 7. bake 15-20 minutes, or until a toothpick comes out clean. |
