A great way to use up old bananas in the freezer. Very moist muffins! Ingredients:
5 large ripe bananas, mashed |
1 egg |
1/2 teaspoon salt |
1 teaspoon baking soda |
1 cup sugar |
1 teaspoon baking powder |
1/2 teaspoon butter or 1/2 teaspoon margarine, softened |
1 cup pecans or 1 cup walnuts, chopped 1 1/2 cups flour |
Directions:
1. Preheat oven to 375 degrees. 2. Mix all ingredients except flour. 3. Gradually add flour, stirring lightly. 4. Pour into greased muffin tins and bake 15 - 20 minutes. 5. or until golden brown. 6. Yields 2 dozen large muffins. |
