I made these vegan by using agave nectar and the corn starch rather than eggs. I also used gluten free all-purpose flour to make them vegan/gluten free! Ingredients:
2 1/2 cups all-purpose flour |
2 tblsp corn starch |
3 tblsp water |
3/4 cup (or more) water |
1/3 cup honey |
1/3 cup mashed banana (or more) |
1 tsp vanilla |
1 dash cinnamon |
1 dash of nutmeg |
1/2 banana ,sliced |
Directions:
1. Preheat oven to 350. Combine all ingredients except the sliced banana- you may need to add or subtract liquid depending on how your batter looks. Pour batter in to greased muffin cups. (I prefer using paper liners). Before baking, put one slice of banana on each muffin. Bake for 18 to 20 minutes. |
