A smart, low fat dessert to impress your guests. Ingredients:
1/2 teaspoon butter |
1 large banana |
2 eggs |
1 teaspoon vanilla extract |
2 ounces fresh breadcrumbs |
1 ounce superfine sugar |
1 1/4 cups milk |
2 ounces sultanas |
4 tablespoons maple syrup |
4 teaspoons low-fat creme fraiche |
nutmeg, grated (optional) |
Directions:
1. Preheat the oven to 400F and grease four dariole moulds or heatproof teacups with the butter - this will help you turn out the puddings and add a touch more flavour. 2. Mash the banana in a mixing bowl, using a fork. Beat in the eggs and vanilla extract, then stir in the breadcrumbs, sugar, milk and sultanas. 3. Spoon the mixture evenly into the moulds or teacups. 4. Arrange them in a small roasting dish, and then pour in enough hot water to reach about halfway up their sides. 5. Bake uncovered, for 35 minutes, until set. Cool for a few moments, then turn out onto small serving plates. 6. Drizzle a tablespoon of maple syrup over each pudding, then finish with a teaspoon of crème fraîche and a sprinkle of freshly grated nutmeg, if you like. |
