This recipe was given to me by a friend. Ingredients:
1 cup mashed ripe banana |
1 cup granulated sugar |
1/4 cup vegetable oil |
1/2 cup sour cream |
2 eggs, beaten |
1 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
Directions:
1. In larg mixing bowl, combine bananas, sugar, oil, sour cream and eggs; mix thoroughly. In separate bowl, mix together flour, baking powder, soda and salt; add to banana mixture, mixing just until combined. 2. Pour into greased 9 x 5-inch (2 L) loaf pan. Bake in 325 F (160 C) oven for 1 to 1-1/4 hours or until tester inserted in centre comes out clean. Cool in pan 5 minutes before turning out onto rack to cool completely. Slice and serve; butter if desired. Makes 1 loaf. |
