These muffins have a fabulous lemony, banana flavor. Make sure you use overripe bananas if you make the recipe. Ingredients:
1 3/4 all-purpose white flour |
1/4 cup whole wheat flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
4 tablespoons butter, softened |
1/2 cup granulated sugar |
1/2 cup light brown sugar |
2 eggs, beaten |
3 very ripe medium bananas, mashed |
1 teaspoon grated lemon zest |
1/3 cup milk |
Directions:
1. Preheat oven to 350 degrees. 2. Grease a muffin pan. 3. Sift together the flours, baking soda, and salt. 4. In a large bowl mix the butter and sugars together. 5. Blend in the eggs,bananas and lemon zest. 6. Add half of the flour mixture and half of the milk, stirring. 7. Add the remaining milk and then the remaining flour mixture, and blend well. 8. Pour into the muffin pan. 9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. 10. Recipe makes about a dozen muffins. |
