Grating real ginger into these muffins is the secret to their flavor. Ingredients:
1 1/2 cup white flour
1 cup whole-wheat flour
2 tsp baking powder
1 tsp cinnamon
1 egg white
1 egg
1 cup skim milk
1/4 cup unsweetened applesauce
2 tbsp canola oil
2 tbsp brown sugar
2 bananas, mashed
2 tsp ginger root
Directions:
1. Preheat the oven to 350 degrees. Combine the flours, baking powder, and cinnamon in a medium bowl. In a large bowl, combine the remaining ingredients and mix well. Slowly add the dry ingredients to the large bowl and mix until blended. Do not overbeat.
2. Pour the batter into 12 nonstick muffin cups and bake for 20-25 minutes. Remove muffins from oven and let cool slightly. Remove muffins from pan and let cool completely.
