Very dense consistency. People don't believe it's almost fat free! Ingredients:
1/2 cup rogers no additive whole wheat flour |
1 cup robin hood all purpose unbleached flour |
1/2 cup cocoa, dry powder, unsweetened |
1 1/2 cup sugars, granulated |
2 tsp baking soda |
1 1/2 cup, mashed bananas |
1/2 cup milk, buttermilk, fluid, cultured, lowfat |
2 large egg, white |
1 1/2 tsp vanilla extract |
Directions:
1. Combine flours, cocoa, sugar and baking soda. Add the banana, buttermilk, egg whites and vanilla, and stir to mix well. 2. Grease a 9x13 inch pan. Spread the batter evenly in the pan. Bake at 325F for about 35 minutes. Cool cake to room temperature. 3. Note: if you add the baking soda to the buttermilk and set aside for 5 min, it will double in volume. You can also whip the egg whites. For a more cake like consistency, mix the buttermilk/soda mixture with the bananas, immediately add the flour mixture and mix well, then fold in the egg whites. 4. You can top this cake with a glaze, but it is also nice with melted chocolate chips on top and walnuts. It is so moist that it does not need any icing. |
