This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gordon Estate in Crandall, Texas in 1994. Ingredients:
1/2 cup all purpose flour |
1/4 teaspoon salt |
2 tablespoons white sugar |
1/4 cup milk |
2 eggs |
2 large bananas sliced |
2 tablespoons vegetable oil |
1/2 tablespoon butter |
Directions:
1. In bowl combine flour, salt and sugar. 2. Gradually pour in milk stirring constantly until smooth batter is formed. 3. Add eggs one at time stirring well each addition then stir in sliced bananas. 4. Heat oil and butter in a small non stick skillet over medium heat. 5. Pour mixture in by spoonfuls spreading mixture evenly across pan. 6. When bottom has turned golden brown turn and cook over low heat until golden brown. 7. Sprinkle with sugar and serve warm. |
