I was searching for a recipe to use up the bananas that are overripe in my kitchen. Most recipes had up to 2 cups of sugar plus butter. I'm trying to watch my weight and still eat some sweets. Hope you enjoy! Ingredients:
5 medium bananas |
1/3 cup sugar |
6 teaspoons xylitol sweetener |
1/4 cup flax seed meal |
2 cups flour |
1 teaspoon baking soda |
3 eggs |
Directions:
1. Preheat oven to 350. 2. In a stand mixer using the paddle attachment, blend bananas, sugar, Xylitol, and flax. When well blended, banana chunks are OK, add eggs one at a time until well blended. Add baking soda and flour. 3. Scrape the inside of bowl to ensure that all ingredients are well mixed. Pour into baking pan (I used a 9x11 ceramic pan). 4. Bake for 25 minutes. 5. Frost with your favorite frosting (Mine is peanut butter!). |
