Wonderful soft, cake-like cookies with a lovely butter-banana frosting. A great way to use up over-ripe bananas. Ingredients:
2 cups flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon ground cinnamon |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
1/4 teaspoon ground cloves |
1/2 cup smart balance |
3/4 cup granulated sugar |
2 eggs, large |
1/2 teaspoon vanilla extract |
1 cup mashed banana |
1/2 cup chopped walnuts |
2 cups sifted powdered sugar |
1/4 cup mashed banana |
2 tablespoons smart balance |
1/2 teaspoon vanilla extract |
Directions:
1. Preheat oven to 375. 2. Grease a cookie sheet. Stir together flour, baking powder, cinnamon, baking soda, salt and cloves. 3. In a mixer bowl beat 1/2 cup smart balance for 30 seconds, then add granulated sugar and beat till fluffy. Add eggs and 1/2 teaspoon of vanilla. Beat well. 4. Add dry ingredients and 1 cup mashed banana (2 medium) alternately to beaten mixter, beating after each addition. 5. Stir in chopped walnuts. Drop from a teaspoon 2 inches apart onto well greased cookie sheet. Bake at 375 for 10 to 12 minutes. 6. Remove from cooke sheet immediately and cool on a wire rack. Frost cookies with Banana Butter Frosting. 7. Directions for frosting: Stir together sifted powdered sugar, 1/4 cup mashed banana (1 medium) and 1/2 teaspoon vanilla extract; mix well. If necessary, add additional powdered sugar to make of spreading consistency. |
