Banana, Date And Bran Muffins |

These are the best banana muffins I've ever made. I've tweaked a few recipes to come up with this. They are rich and tastey, soft and moist, but not at all stodgey. Ingredients:
2.5 cups brown flour |
2 tsp baking powder |
2tsp baking soda |
0.5 cups bran |
1 cup cornflakes |
0.5 cups molasses sugar / very dark brown sugar |
pinch salt |
125g marg or butter |
1 cup chopped dates (good quality dates) |
0.25 cups golden syrup |
2 large ripe bananas, mashed |
1 cup milk |
0.5 cups water |
1 tbsp vanilla essence |
1 tsp rum essence |
1 egg |
nuts for decorating |
Directions:
1. Preheat oven to 180 degrees 2. Sift the first seven ingredients into a large bowl. (Add the cornflakes because you can't sieve them!!). Mix well. 3. Then in a microwave jug melt the butter (takes about 30 seconds). Into the melted butter add the chopped dates, golden syrup, mashed bananas, milk and water, essences and eggs. Mix well and then pour into the dry ingredients. 4. Spoon mixture into silicon cupcake cases and sprinkle with nuts. Cook for 15mins. |
