This recipe goes with Steamed Fish with Banana-Curry Sauce Ingredients:
1/2 teaspoon olive oil |
1/4 cup chopped vidalia or other sweet onion |
2 small ripe bananas, quartered |
1 shallot, quartered |
1 garlic clove, halved |
1 3/4 teaspoons curry powder |
3/4 cup low-salt chicken broth |
1 tablespoon rice vinegar |
1 1/2 teaspoons honey |
dash of salt |
Directions:
1. Heat oil in a medium nonstick skillet over medium-high heat. Add onion, bananas, shallot, and garlic; sauté 2 minutes. Add curry powder, and sauté 30 seconds. Add chicken broth, and simmer 5 minutes, stirring occasionally. 2. Place onion mixture, vinegar, honey, and salt in a blender, and process until smooth. |
