BANANA CURRY MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Howell Estate in Longview Texas in 1994. Ingredients:
2 cups flour |
2 teaspoons baking powder |
1-1/2 cups bran |
2 ounces butter |
1 cup milk |
1 teaspoon curry powder |
1 tablespoon golden syrup |
3/4 cup mashed bananas |
3 tablespoons sweetened condensed milk |
1/2 teaspoon baking soda |
Directions:
1. Preheat oven to 350 and prepare muffin pans. 2. Sift flour and baking powder then stir in bran and make well in center. 3. Melt butter, curry powder, syrup and condensed milk together. 4. Dissolve soda in the milk and pour into dry ingredients with butter mixture and bananas. 5. Stir until just combined then spoon into pans and bake 15 minutes. |
