Banana Cookies (With Dates and Nuts) |

Yummy cookies!! Great when you have leftover bananas that are too soft to eat .. they smell heavenly while baking, and keep well in the fridge ... I don't add the nuts, but you can if you like .. Ingredients:
1 cup mashed ripe banana (chopped) |
1/2 cup butter |
1/2 cup sugar |
2 large eggs |
1 teaspoon vanilla |
1 1/2 cups flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/8 teaspoon cinnamon |
1 pinch salt |
1/2 teaspoon nutmeg |
1/8 teaspoon clove |
1 1/2 cups quick oatmeal |
1/2 cup nuts |
1 cup chopped dates |
Directions:
1. Preheat oven to 375°F. 2. In a large bowl, combine butter, sugar and eggs. 3. Add bananas and vanilla, mix well. 4. Add the rest of the ingredients, with dates and nuts last. 5. Drop dough onto cookie sheet (sprayed with non-stick spray), and flatten slightly. 6. Bake 12 minutes or until done. |
