These cookies are much like little banana cakes or little banana bread drops, with a mild banana flavor. Ingredients:
2 1/2 cups all-purpose flour |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
3/4 cup brown sugar, packed |
2 tablespoons brown sugar |
1/4 teaspoon ground cinnamon |
1/2 cup butter |
1/4 teaspoon vanilla extract |
1/4 teaspoon banana extract |
2 eggs |
3 ripe bananas, mashed |
1/3 cup chopped walnuts, toasted |
Directions:
1. Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with parchment paper. 2. Sift together flour, baking soda and salt. 3. In a small bowl, combine 2 tablespoons brown sugar with cinnamon, set aside. 4. Beat together the remaining 3/4 cup brown sugar, butter, vanilla and banana extract until light and fluffy. 5. Beat in the eggs, and then add the mashed bananas. 6. Slowly stir in the flour mixture. 7. Fold in the chopped nuts, if using. 8. Drop by the teaspoonful onto the baking sheet. Sprinkle with the brown sugar/cinnamon mixture. 9. Bake 8-10 minutes until lightly browned around the edges. 10. Let the cookies cool a moment on the baking sheet before transferring to wire racks to cool completely. |
