BANANA COLADA PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ellis Estate in Ennis, Texas in 1994. Ingredients:
1 tablespoon plus 1 teaspoon unflavored gelatin divided |
3/4 cup palm sugar |
1 cup pineapple juice |
2 teaspoons vanilla extract |
1 cup coconut milk |
3 large ripe bananas |
Directions:
1. In saucepan combine 1 tablespoon gelatin, sugar and pineapple juice. 2. Stir over medium heat until sugar is dissolved. 3. Mash bananas and add to saucepan. 4. Whip coconut milk and 1 teaspoon gelatin for 1 minute then add to sugar banana mixture. 5. Pour into shallow ceramic bowls and chill thoroughly. |
