Ingredients:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sweetened flaked coconut
1/4 cup light brown sugar
1/2 cup butter, melted
3 bananas, mashed
3/4 cup buttermilk
1 teaspoon vanilla
Directions:
1. In a large bowl, whisk together flour, baking powder, cinnamon, baking soda, salt and coconut.
2. In another bowl, whisk together brown sugar, melted butter, mashed bananas, buttermilk, and vanilla.
3. Using a rubber spatula fold the banana mixture into the dry ingredients until no trace of flour remains.
