Ingredients:
1 2/3 cups flour |
1/4 cup granulated sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 cup coconut |
1/2 cup raisins |
2 bananas, chopped |
1 egg |
1/2 cup milk |
1/4 cup brown sugar |
3 tablespoons margarine or 3 tablespoons butter, melted |
1/3 cup coconut |
2 teaspoons brown sugar |
2 tablespoons margarine |
1/4 teaspoon cinnamon |
Directions:
1. Mix dry ingredients, including coconut and banana. 2. Beat egg, add milk and margarine. 3. Add to dry ingredients, mix until moistened. 4. Spoon into muffin pans. 5. Topping-. 6. Mix and sprinkle over unbaked muffins. 7. Bake at 375 for 25 minutes. 8. Makes 12 muffins. |
