A local morning show has a Muffin of the Month recipe every month, and this one was March's. The recipe comes from A'Bravo Catering in Green Bay, Wisconsin. Ingredients:
1 1/4 cups flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
2 bananas, mashed (3/4 cup) |
1/2 cup unsalted butter, melted |
2/3 cup sugar |
1 egg |
1/2 teaspoon vanilla |
3/4 cup sweetened flaked coconut, divided |
Directions:
1. Preheat oven to 375°F 2. Line muffin cups with liners, or spray with nonstick cooking spray. 3. Whisk together flour, baking powder, and salt in a bowl. 4. Whisk together bananas, butter, sugar, egg, vanilla, and 1/2 cup coconut in a large bowl until combined well, then fold in flour mixture until just moistened. 5. Divide batter among lined muffin cups and sprinkle with remaining 1/2 cup coconut. 6. Bake about 25 minutes or until muffins are puffed and golden. 7. Transfer muffins to a rack to cool. |
