Can be made up to 3 days ahead. untested Cooking time is freeze time. Not sure where I found this but I love coconut so this sounds like a winner to me.. Ingredients:
340 ml coconut milk |
1 cup skim milk |
2 eggs |
1/4 cup caster sugar |
2 teaspoons gelatin |
1/4 cup water |
1 medium ripe banana, mashed |
Directions:
1. Whisk coconut milk, skim milk, eggs and sugar together in a heatproof bowl over simmering water until warm & frothy. 2. Sprinkle gelatine over water, dissolve over the hot water and cool but do not allow to set. 3. Gradually whisk gelatine mixture into egg mixture, pour into lamington pan, cover with foil & freeze for several hours or until set. 4. Chop mixture roughly, place in a large bowl and beat with an electric beater until light & fluffy;beat in banana. Return mixture to lamington pan, cover & freeze until set again. |
