Banana Coconut Cream Pie

Prep time does not include chill time.
Ingredients:
1 graham cracker crust, store-bought or homemade
3 tablespoons cornstarch
1 1/3 cups water
14 ounce can sweetened condensed milk
3 egg yolks, beaten
2 tablespoons butter or margarine
1 teaspoon vanilla extract
1/2 cup flaked coconut, toasted
2 medium bananas
lemon juice
whipping cream, whipped
Directions:
1. In a heavy saucepan, dissolve cornstarch in water.
2. Stir in sweetened condensed milk and egg yolks.
3. Cook and stir until thickened and bubbly.
4. Remove from heat.
5. Add butter and vanilla.
6. Cool slightly.
7. Fold in coconut.
8. Slice bananas, then dip in lemon juice and drain.
9. Arrange banana slices on bottom of pie crust.
10. Pour filling over bananas.
11. Cover and chill for 4 hours OR until set.
12. Top with whipped cream.
13. Garnish with additional toasted coconut and sliced bananas, if desired.
14. Store, covered and refrigerated.
