Banana Chocolate Chip Oatmeal Cookies |

A great spin on oatmeal cookies. These are moist, delicious and a nice way to use up bananas. Ingredients:
3/4 cup vegetable shortening |
1 cup sugar |
1 egg |
1 cup mashed banana |
1 1/2 cups all-purpose flour |
1/2 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
2 cups quick oats |
1 cup chocolate chips |
Directions:
1. Preheat oven to 400°F 2. Mix shortening, sugar, egg and bananas well. Add flour, baking soda, salt, cinnamon and nutmeg. Stir in oats and chocolate chips. 3. Drop by rounded tablespoons onto baking sheet. Bake 8 to 10 minutes. Cool on wire rack. |
