Banana Chocolate Chip Muffins |

A delicious, moist muffin that's just a little bit healthier! Ingredients:
1 1/3 cups all purpose flour |
2/3 cup whole wheat flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
2 eggs |
1 cup lowfat plain yogurt |
1/4 cup butter, melted |
1 teaspoon vanilla extract |
2 medium ripe bananas, mashed |
1 cup chocolate chips |
Directions:
1. Preheat oven to 350 degrees. Grease muffin pan or line with paper liners. 2. Combine flours, sugar, baking powder and soda, salt, cinnamon and chocolate chips in a large bowl. In another bowl, beat eggs, yogurt, butter, vanilla and bananas. Stir mixture into dry ingredients just until moistened. (Do NOT overmix!) 3. Fill prepared muffin cups 3/4 full. Sprinkle tops with sugar, if desired. Bake 20 - 25 minutes, or until a toothpick inserted in muffin comes out clean. |
