Love the addition of cinnamon chips. Ingredients:
1/2 cup unsalted butter |
1 cup granulated sugar |
1 large egg |
1 teaspoon vanilla |
2 medium ripe bananas, mashed (about 3/4 cup) |
1/3 cup milk |
1 cup white whole wheat flour |
1 cup unbleached all-purpose flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
3/4 cup chocolate chips |
1 cup toasted walnuts, chopped |
1 cup cinnamon baking chips |
Directions:
1. Preheat your oven to 350°F 2. In a medium-sized mixing bowl, cream together the butter and sugar till they're smooth. Beat in the egg, flavoring, banana and milk. 3. In a separate bowl, whisk together the dry ingredients, then gently stir them into the butter mixture. 4. Spoon the batter into 18 regular-sized lightly greased muffin cups. Bake the muffins for 20 minutes, or until a cake tester inserted into the center of one comes out clean. Remove them from the oven, and after 10 minutes turn them out of the pan to cool. |
