A moist delicious muffin to have for breakfast or even a lunchbox snack. Feel free to use less sugar since the bananas are sweet on their own... Ingredients:
2/3 cup oil |
3/4 cup sugar |
3 eggs |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 medium banana, mashed |
1 cup flour |
3 large carrots, grated |
Directions:
1. preheat oven to 350 F (or 180 celcius). 2. mix ingredients in a large bowl, in order mixing after each addition. 3. line a muffin tin with liners. 4. bake for 25-30 minutes or til toothpick inserted comes out clean. |
