Banana Cake with Coconut Icing |

Ingredients:
1/2 cup butter |
2 cups flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
3/4 teaspoon salt |
1 1/2 cups white sugar |
1 cup ripe banana (mashed) |
1/2 cup sour milk |
2 eggs |
3/4 cup brown sugar |
1/2 cup butter |
2 tablespoons cream or 2 tablespoons milk |
1 cup coconut |
Directions:
1. Whip butter in bowl. 2. Sift in dry ingredients. 3. Add milk, bananas, eggs and mix. 4. Bake at 350F for 25-35 minutes Combine ingredients for icing in a heavy saucepan, and cook until well blended. 5. Spread over cake while still warm. 6. (Tip- to make sour milk, add a splash of vinegar and stir). |
